BREAKFAST ON-THE-GO

Breakfast is not always the easiest part of the day, and it's usually hectic in our home. My boys are not quiet and definitely not laid back chill kids. They want mommy’s attention and they want to play. After-all they just slept for about 12 hours and are excited to start their day. In order to overcome the challenge this can present, I have found that a healthy smoothie is a great way to start our day! Dylan and Brody love to help me in the mornings to make it. It's a fun activity for all of us and they get to see what actually goes into it! Dylan who won’t eat his veggies has no problem putting them into a smoothie, go figure?! I use my Vitamix, our most used kitchen gadget in our home. Its out of control how awesome it is. My recipe is below.

The second amazing breakfast that I make is a make-ahead egg bake which is unbelievably delicious. Always the hit at a brunch. I always make a double batch that way I have one to serve at a brunch and one more to keep for my family so they can have it for the week. I am always looking for ways to make life easier and healthier so make-ahead dishes are my fave! Don’t be overwhelmed by the length of the recipe. It is super easy to make and really doesn’t take that long.

Yummiest Ever Vegetable Egg Bake

I also make a day before and leave it raw in my fridge and bake it in the morning!

I always double the recipe when its for a large group or if I want to make 2 one for the party and one to keep at home

Ingredients:

3 cups shredded Cheddar cheese or so

2 tablespoons coconut oil

1 bunch broccoli cut up small and baked in the oven with a little salt and olive oil

2 chopped onions Sautéd

1/3 cup sliced green onions

1/2 cup chopped red bell pepper

8 eggs

1 3/4 cups vanilla almond milk or regular

1/2 cup Kamut flour or rice flour

2 tablespoons minced fresh parsley

2 drops basil essential oil or fresh leaves chopped

1/2 teaspoon salt

1/4 teaspoon ground black pepper

Directions:

Preheat oven to 350 degrees F (175 degrees C).

Place 1/2 the cheese mixture into a 9x13-inch baking dish. Melt coconut butter in a large skillet over medium heat; cook onions, and red pepper until vegetables are tender, about 5 minutes; drain. Bake broccoli with a bit of salt and olive oil. Combine cooked broccoli to the onion mixture and then spread vegetables over cheese mixture. Beat eggs in a bowl; mix in milk, flour, parsley, basil, salt, and pepper. Slowly pour egg mixture into baking dish. Add cheese on top. Bake in preheated oven until a knife inserted near the center comes out clean, usually takes 45 mins to an hour. Let stand 10 minutes before cutting. Enjoy!

Easy Peezy Smoothie Recipe:

Serves 2-4 people

Ingredients:

1 banana

2 cups strawberries or mixed fruit

1 apple

1 pear

1 handful of greens

¼ cucumber

2 cups water

2 cup organic unsweetened almond milk

1-2 scoops of your favorite protein powder

2 drop of your favorite doTerra essential oil (wild orange, lime, peppermint, citrus bliss)

Directions:

Add all ingredients to blender and blend. Add more water if it is too thick.

Quick facts/tips for Smoothies:

Fruit may be varied to what you have on hand or in the freezer. Smoothies are blended foods and keeps all its fibre. Because of the blending process the fibres are broken down making it easier to digest rather than if you were to eat them in its whole form. Your body still has some work to do but it is much easier to break down. They are more filling and can be used potentially as a meal replacement. They are great way to get raw healthy vegetables into your diet. You can pretty much add anything to a smoothie... fats, protein, carbs, fruits, veggies, nuts, seeds etc...
